I love weekends – you can pack in so many activities and still at leisure pace… We started Sunday with a slow breakfast, talking and enjoying our coffee, then some reading, then hiking with our dog in Turkey Swamp Park, and there was still enough time left for smoking pork ribs.
Mopped with ancho salsa i made (and posted about) yesterday.
I voted these ribs the best thing that came out from our smoker so far. The rub actually worked especially the herb part – and that was quite surprising – we didn’t have time to marinade the meat overnight as it’s usually suggested; seems like provence herbs – thyme, marjoram, rosemary are sturdy enough to overcome the smoke.
On the side – coleslaw of cabbage, carrots and apples (from Mustards Grill book) – the sauce of mayo, sour cream, dijon, honey; the flavor of apples is accentuated with Gegenbauer apple balsamic vinegar.
The other side was pan steamed/roasted fat scallions and asparagus… The dinner was fancied from Mustards Grill – bbq ribs, slaw and grilled sweet potatoes but i decided against potatoes. Vegetables like asparagus, mushrooms or fennel seem to provide enough substance without being heavy.
