I wanted to try roasted radicchio for quite a while. The recipe was a toss up bw Lidia’s and Suzanne Goin’s. I was already decided on scallion farrotto from Babbo’s, so Goin’s recipe that didn’t involve any onions seemed more appropriate.
And this is how nice roasted radicchio looked just out of the oven:
The farro comes from Anson Mills and has the same nice roasted smell as their oatmeal.
