Somehow it never occurred to me to steam squid (or shrimp); until now that is – seems like it’s a great way to cook either.
It takes about couple mins to cook squid (cut up into 1/4″ rings) and about 2-3 mins for med shrimp. Just don’t put them together. Since the cooking time is so short it’s no big deal to do it in sequence.
I improvised some pesto mostly from bits and pieces in need to be used: a clove of garlic, a scallion, some pine nuts, half of an anaheim chile, handful of parsley and mint, and some arugula.
And udon is my favorite type of noodles – i like its chewiness. Overall came as a great dinner, in no time!
