But mushrooms are good this way – marinated for an hour, 5mins med heat on each side, then indirect (no need to turn) for 15mins more…

apparently a variation on Blood and Sand with tequila amd mezcal instead of s traditional scotch. Nice drink but mezcal pretty much masks all the other flavors…

* 1 ounce reposado tequila
* 3/4 ounce Cherry Heering
* 1/2 ounce mezcal
* 1/2 ounce freshly squeezed lime juice
* 1/4 ounce agave nectar
* 2 dashes aromatic bitters

shake with ice and pour into a chilled martini glass

Excellent idea – like an immediate ceviche.
I also used the remaining salad and salsa for sort of escabeche with the remaining grilled trout (see the previous post).

The trout was put into salsa skin up and set there overnight – tremendous cold dish. In fact well worth making from scratch especially for a party where one prefers to do as much as possible in advance…

Painted the inside with some chipotle pesto and cilantro salsa, brushed both skin and husks with olive oil and grill on high heat for 3 mins on each side. Simply perfect!

Tried to create some drink around Creme de Violette: something blue and delicate. Gin, CdV, Maraschino and lemon juice. Ended up with a decent libation but there was nothing blue about it – my mistake was to muddle a strawberry into it – along the way lost a delicate flavor of violettes…

Interesting mezcal based drink: the original formula was 1.5oz mezcal, 0.75 pineapple juice, 0.5oz coffee liqueur, 0.25oz orgeat. So maybe my pineapple was not acidic enough i ended up squeezing half of lime to achieve a balance… Nice and complex…

1.5 oz Reposado Tequila
.75 oz Fresh lemon juice
0.75 oz agave nectar
3 Fresh strawberries, quartered
3 Fresh basil leaves
.125 oz Balsamic vinegar
PREPARATION: Muddle all ingredients in the bottom of a shaker. Shake with ice and strain into a chilled martini glass.
